One-Pot Chicken and Rice – A Comfort Classic

  • 1 tablespoon olive oil
  • 4 bone-in chicken thighs (or boneless if preferred)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 cup long-grain white rice
  • 2¼ cups chicken broth
  • 1 cup frozen peas (optional)
  • Fresh parsley for garnish

👩‍🍳 Instructions:

  1. Season & Sear Chicken
    Rub chicken with salt, pepper, and paprika. In a large skillet or pot, heat olive oil over medium-high heat. Sear chicken for 3–4 minutes on each side until golden brown. Remove and set aside.
  2. Sauté Aromatics
    In the same pot, add onions and garlic. Cook for 2 minutes until soft and fragrant.
  3. Add Rice & Broth
    Stir in rice and toast for 1 minute. Pour in chicken broth and bring to a light boil.
  4. Return Chicken & Simmer
    Place chicken back into the pot. Cover, reduce heat to low, and simmer for 25–30 minutes, or until rice is cooked and liquid is absorbed.
  5. Final Touch
    Stir in peas (if using) and cook for 2 more minutes. Garnish with chopped parsley.
