- 1 tablespoon olive oil
- 4 bone-in chicken thighs (or boneless if preferred)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 cup long-grain white rice
- 2¼ cups chicken broth
- 1 cup frozen peas (optional)
- Fresh parsley for garnish

Rub chicken with salt, pepper, and paprika. In a large skillet or pot, heat olive oil over medium-high heat. Sear chicken for 3–4 minutes on each side until golden brown. Remove and set aside. - Sauté Aromatics
In the same pot, add onions and garlic. Cook for 2 minutes until soft and fragrant. - Add Rice & Broth
Stir in rice and toast for 1 minute. Pour in chicken broth and bring to a light boil. - Return Chicken & Simmer
Place chicken back into the pot. Cover, reduce heat to low, and simmer for 25–30 minutes, or until rice is cooked and liquid is absorbed. - Final Touch
Stir in peas (if using) and cook for 2 more minutes. Garnish with chopped parsley.
